Simon looks after the stream-fed Rainbow Trout business, producing both fresh whole fish, and hot, oak-smoked fillets. After much time perfecting the taste of the fish, both products won Gold in the Taste of the West Awards 2016 and a specially-created category of Best Fresh Fish of the South West that year as well.
